Recipe for a refreshing and colorful Fresh Garden Salad
Ingredients:
For the Salad:
- 2 cups shredded cabbage (green or purple)
- 2 medium carrots, grated
- 1 cucumber, sliced
- 1 large tomato, diced
- 1/2 red onion, thinly sliced
For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons vinegar
- Salt and black pepper to taste
Optional Additions:
- 1/2 cup pitted black olives

Instructions:
- Prepare the Vegetables:
Shred the cabbage, grate the carrots, slice the cucumber, dice the tomato, and thinly slice the red onion. If you’re using olives and feta cheese, prepare those as well.
- Make the Dressing:
In a small bowl, whisk together the olive oil, vinegar, and black pepper. Taste the dressing and adjust the seasonings if needed.
- Combine the Salad Ingredients:
In a large salad bowl, combine the shredded cabbage, grated carrots, sliced cucumber, diced tomato, and sliced red onion. If you’re using olives and feta cheese, add them to the bowl as well.
- Drizzle the Dressing:
Pour the dressing over the salad ingredients. Start with about half of the dressing, toss the salad gently, and taste. Add more dressing as needed to achieve your desired level of flavor.
- Season with Black Pepper:
Grind fresh black pepper over the salad to add a burst of flavor. Remember that the dressing already contains some black pepper, so adjust to your taste.
- Toss and Serve:
Gently toss the salad to evenly distribute the dressing and seasonings. Be careful not to overmix to avoid crushing the vegetables. Taste again and adjust the salt, pepper, or dressing if necessary.
